<p>Being diagnosed as gluten intolerant can’t be something you’d celebrate but out of fear of ‘never eating nice food again’, Becky Excell turned things into a complete positive, launched an entirely new career and with it gained a huge following (408k on Instagram to be specific). It’s no surprise though after all, her stance on GF cooking is all about making your favourite things &#8211; from pastry to pizza and ensuring they taste great.</p>



<p>She’s won multiple awards and multiple book deals and the admiration of fellow cooks, including Nigella Lawson who raved about Becky’s gluten free Yorkshire puddings. She’s also regular face on This Morning and shares her GF knowhow with the nation. But she’s no one-trick pony and shares recipes for dairy fee and for low FODMAP diets as well as the all-essential air fryer cookbook for anyone who is gluten free.</p>



<p>Better still, she’s headed to Chichester on 17 Aug for the <a href="https://www.goodfoodshow.com/goodwood-festival/">Good Food Festival</a> where you can catch her and learn more about gluten free cooking with a live demonstration. Muddy caught up with Becky to get more GF tips.&nbsp;</p>



<h3 class="wp-block-heading" id="h-how-did-you-get-into-gf-cooking"><strong>How did you get into GF cooking?</strong></h3>



<p>My journey into gluten-free cooking and baking was purely out of frustration. Back when I first started a gluten-free diet, it was a proper struggle to find anything to eat and what I could find left a lot to be desired, to put it kindly. That&#8217;s when I started making my own recipes instead and I&#8217;ve never looked back. I started on a gluten-free diet while studying law at University, then I went on to work in PR in marketing; now I write cookbooks&#8230; it&#8217;s been quite a ride!</p>



<h3 class="wp-block-heading" id="h-what-are-you-looking-forward-to-at-the-good-food-festival">What are you looking forward to at the Good Food Festival? </h3>



<p>I&#8217;m always on the hunt for good gluten-free grub so I definitely look forward to finding something new and exciting to try. I love the atmosphere and chilled vibe at Goodwood and hopefully the sun will be shining too. I&#8217;m a big advocate for down-to-earth, easy-to-achieve cooking and baking, so expect something humble yet irresistible from me there. Of course, all my gluten-free knowhow is baked into every recipe I make, so you might leave with a little of that too.</p>

<h3 class="wp-block-heading" id="h-there-s-a-lot-of-sweet-gluten-free-bakes-around-but-so-little-savoury-how-can-we-change-this"><strong>There&#8217;s a lot of sweet gluten free bakes around, but so little savoury, how can we change this?</strong></h3>



<p>I always notice that too. So often, a major coffee shop chain will launch a few gluten-free products, barely mention them or promote them, then they&#8217;ll quietly disappear a few months later. It&#8217;s like they expected some sort of immediate stampede of gluten-free custom despite not letting anyone know the stuff is even there. If we reward the places that do cater for us really well (by shouting about them as safe places to eat and recommending them online to others) things will hopefully soon change for the better as they realise we&#8217;re well worth catering for. If any coffee shops are reading this, we don’t want a dry packaged gluten free brownie for lunch &#8211; can we have a gluten free sandwich like everybody else please?</p>



<h3 class="wp-block-heading" id="h-where-does-the-best-gf-products"><strong>Where does the best GF products?</strong></h3>



<p>All the major supermarkets have improved so much over the years and their free from aisles are great places to start. For me, brown rice pasta is an all time great discovery that I don&#8217;t think many people bother to try &#8211; it doesn&#8217;t break anywhere near as easily and it has a great texture without any unwanted extra flavour. It’s perfect for summer pasta salads &#8211; give it a try!</p>

<h3 class="wp-block-heading" id="h-what-are-your-tips-for-eating-out-when-you-re-gluten-free"><strong>What are your tips for eating out when you&#8217;re gluten free?</strong></h3>



<p>Check online menus before you head out to eat. There&#8217;s nothing worse than turning up at a place only to find out they don&#8217;t cater for you whatsoever. Checking menus a little ahead of time puts you in control and you can even enquire about your dietary requirements before you get there too so there&#8217;s no nasty surprises. Honest Burgers is great for both gluten-free and dairy-free and if I&#8217;m ever near one, you can bet that I&#8217;ll go.</p>



<h3 class="wp-block-heading" id="h-what-are-the-essential-store-cupboard-ingredients-when-cooking-gluten-free-recipes"><strong>What are the essential store cupboard ingredients when cooking gluten free recipes?</strong></h3>



<p>If we don’t count the likes of gluten free pasta and bread I’d say a good gluten free flour blend, gluten free soy sauce for making fakeaways at home, xanthan gum for baking as it helps provide gluten free cakes with a better texture, gluten free stock cubes so you can easily make safe sauces and then gluten free corn flakes as if you crush them up they make a fab panko breadcrumb style coating. If you want to delve into the world of gluten free bread baking then ingredients like psyllium husk and tapioca starch and also key!</p>



<h3 class="wp-block-heading" id="h-which-of-your-own-gf-recipes-are-most-popular"><strong>Which of your own GF recipes are most popular?</strong></h3>



<p>By far, it&#8217;s got to be my gluten-free Yorkshire puddings. I&#8217;d say they&#8217;re my most popular because they&#8217;re utterly indistinguishable from gluten-containing Yorkies, but it might also be because Nigella Lawson recommended them too.</p>



<h3 class="wp-block-heading" id="h-what-advice-you-d-share-with-people-who-are-trying-out-gf-baking"><strong>What advice you&#8217;d share with people who are trying out GF baking?&nbsp;</strong></h3>



<p>This is probably quite predictable coming from me, but it&#8217;s just so true: start with tried and tested, reliable gluten-free recipes before you start trying to convert your old favourite gluten-containing recipes. Not all recipes are as simple as swapping wheat flour for gluten-free flour and you can end up wasting a lot of time, ingredients and money experimenting like this. I do the hard work recipe testing multiple times (making mistakes along the way!) so others don’t have to!</p>
